This avocado hummus has a great texture, flavor, and vibrant color! It is quite different from the guacamole, a bit more substantial.
400g chickpeas
2 ripe avocados
2 spring onions
1 clove garlic
1 tbsp sesame paste (tahini)
a few leaves of basil and mint
1 Lemon juice
Paprika (optional)
Olive oil
Sesame to serve
Salt and pepper

After cooling the chickpeas, blend them with the garlic, lemon juice, tahini, and herbs until the texture is a little creamy (if not completely homogeneous).
Put in a bowl and serve immediately with a drizzle of olive oil and sesame seeds with lemon juice. Serve it fresh with pita bread or even in a sandwich or as a pasta sauce by adding a few crushed fresh tomatoes.
