Tuna croquettes with coriander
For an aperitif that is out of the ordinary, forget the chips and bet instead on these tuna croquettes with coriander. Delicious and healthy. As a bonus, they will take you less than 30 minutes to prepare, cooking included.
600g mashed potatoes
2 teaspoons garlic
100ml olive oil
1 tomato coulis
6 coriander sprigs
Thaw the puree in a saucepan over very low heat or in the microwave. Off the heat, mix it with the milk, the crumbled tuna, the garlic and the chopped coriander. Salt, pepper and mix to obtain a homogeneous paste (if necessary add a little milk).
Heat the oil in a skillet. Take a ball of dough and flatten it slightly. Place the croquette thus formed in the pan. Do this for all the croquettes.
Cook them for 2 minutes on each side until they are golden brown, drain them on absorbent paper and serve them very hot with the reheated coulis.
