Directions
Clean and peel the mushroom. Cut Mushroom and radishes into thin slices with a slicing knife or using a mandolin (1.5mm).
Arrange on a plate, alternating a slice of mushroom with a slice of radish. Make 2 layers of carpaccio and finish by placing slices of Parma ham and parmesan in the middle. Season everything with Basil oil, broken walnuts, fleur de sel and pepper.
