INGREDIENTS
4 salmon fillet
200 g of bread
50 g Parsley
4 tbsp of mustard
1 clove of garlic
Olive oil
Salt
Pepper

Directions
1. Preheat the oven to 180°C. In the bowl, mix the crunched bread with the herbs, the garlic and 1 tbsp of oil. We must obtain a more or less fine breadcrumbs, fairly homogeneous and slightly moist.
Place the salmon on a baking tray lined with baking paper (if there is skin, leave it underneath). Salt it and brush with the mustard. Place the aromatic breadcrumbs on top, over the entire surface, forming a thickness of about 1/2 cm.
Add salt, pour a drizzle of olive oil and bake for about 10 to 15 minutes (it also depends on the thickness of the slice, check with a knife in the middle, the flesh must yield). Increase the temperature to 200°C and cook for another 5 minutes or so until the breadcrumbs brown and slightly crust. It should be cooked but still soft inside.
Serve hot or warm with a little lemon juice or yogurt or fromage blanc. Voila!
