1kg Potato
1 Lemon
1 Burrata
50g Sliced almonds
50ml Olive Oil
50g Spring Onion
Salt/Pepper

Clean the potatoes, dry them then cut in 2 or 4. Preheat the oven to 185°C (thermostat 6-7).
Slice Half of the Spring Onions and add them, with the potatoes, on a baking sheet lined with baking paper. Coat them with oil and sprinkle with salt. Bake for approximately 30 minutes.
Brown the almonds in a frying pan then coarsely crush them.
Finely chop the remaining Spring onions. Put aside.
Take the lemon zest and 2 tablespoons of its juice. Melt a pinch of salt in the lemon juice then add 3 tablespoons of olive oil. Emulsify.
Take out the potatoes of the oven. Transfer in a dish. Decorate with almonds, fresh onions and arrange the burrata on top. Season with the lemon zest, salt and pepper. Serve immediately to enjoy the delicious hot and cold.
