A bit like a roasted camembert or grilled halloumi, it is often offered in brasseries in France. It's very tasty! Here is the oven-roasted feta flavored with Zathar spices and herbs.
If you cook the feta, after 10 minutes it will have melted slightly: the shape remains but if you touch it or crush it, you get a kind of dense cream... which is great if you want to eat it with pasta for example.
Here is a recipe for a firmer feta, which you can cut and serve on a plate (it's pretty), that's why it's very important to dry the feta in the oven turned off for at least 10 minutes (or more).
200 g feta in a single slice
1 pinch paprika
Fresh thyme
Fresh rosemary
Black sesame
Oregano
extra virgin olive oil
pepper
Basil leaves
Mint leaves

Directions
Preheat the oven to 200°C
Place the feta on baking paper and then on a small baking sheet.
Sprinkle with spices, thyme then drizzle with olive oil.
Bake for 10 minutes, open the oven then turn off and leave the feta to rest for ten minutes (the cheese will firm up)
Serve with pepper, basil and mint.
