MOROCCAN BEEF MEATBALLS RECIPE

500g minced beef
1 bunch of fresh parsley
3 onions
2 cloves garlic
5 beautiful tomatoes
2 tbsp. of paprika
2 tbsp.cumin powder
4 tbsp. olive oil
6 eggs
salt, pepper

Mix the minced meat, chopped parsley, half of the cumin and paprika, salt and pepper. Put aside.
Shape into golf ball sized (about 4cm)
Heat olive oil in your pan or in a tajine dish, brown the meatballs, turning them over so that they are well seared for 3-4 minutes.
Add the very finely minced garlic, diced onions, let them melt. Sprinkle with the remaining half of cumin and paprika.
Finely dice the fresh tomatoes and add to the onions. Cook for 12 minutes, stirring well to obtain a nice thick sauce.
Add the meatballs to the sauce and simmer for 10 minutes.
Gently break 6 eggs on the meatballs, spacing them well.
Cover and cook the eggs which will "poach" for 5 minutes.
Sprinkle with chopped parsley and serve hot!
