These Chicken and Parma Ham bites are a treat ready in minutes that is always appreciated and has a great visual effect.
Here the ham will coat the tender and soft chicken giving taste, character but also a slightly crispy and very attractive texture. Sage will brings a unique, very aromatic flavor that refreshes the bites.
300 g of chicken breast, cut into 3-4 cm pieces
6 slices Parma Ham
Fresh sage leaves
Olive oil
Tips : – This is a quick dish that should be eaten immediately otherwise the meat becomes a bit tough and tends to dehydrate. You can form the bites in advance and keep them raw in the fridge, covered with cling film for an hour. All you have to do is cook them right before diner.
Directions
Cut the slices of ham lengthwise to obtain 12 slices.
Place the slices on a work board, place a piece of chicken on top and roll up. Fix a sage leaf on top with a toothpick, taking care to have the folds of the ham underneath.
In a skillet, heat 3 tbsp of olive oil. Add 6 bites of meat and cook just until the ham crisps on top and the meat comes off the bottom of the pan. Remove the toothpick and turn the pieces of meat over so that the sage is underneath. Add 1 tbsp of oil and cook for a few more minutes over medium heat, until the chicken is cooked through and the ham changes color and becomes firmer.
Serve hot with the rest of the fresh sage leaves and a little pepper if you like.
