LEMONY SEA BRAM WITH WHITE WINE

2 sea bream gutted
750g potatoes
4 lemons
2 fennel bulbs
2 tablespoons chopped parsley
1 shallot
15g butter
200 ml cream
150ml white wine
3 tablespoons of olive oil
1 pinch of fleur de sel
1 pinch of pepper

Boil the potatoes for 12 minutes. Drain and transfer them to a large baking dish.
Grate the lemon zest, mix with 2 tablespoons of fleur de sel and the chopped parsley. Cut 3 slits going to the bone on each side of the sea bream, distribute the previous mixture in the slits and inside the fish, keeping 1 teaspoon aside.
Cut 2 lemons into slices and cut the fennel into strips. Divide half inside and over the fish, tie them up and place them on the potatoes. Add the remaining lemon slices and fennel slices to the dish. Drizzle with 3 tbsp oil and sprinkle with remaining lemon salt and pepper.
Preheat the oven to 220°C. Peel and finely chop the shallot. Brown it with the butter in a small saucepan, add the white wine, bring to the boil and reduce by 3/4 before adding the liquid cream and simmering for 10 minutes. Add the juice of half a lemon, salt and pepper.
Put the dish in the oven for 15 minutes of cooking then serve the sea bream and the vegetables with the sauce.
