This cooking method of the duck breast is for the fans of crispy skin!
What you need:
1 duck breast
1 pinch of salt
1 pinch of pepper
Directions
Remove the excess fat from the duck breast (on the sides) and the small skin on the surface. Then make grid incisions on the skin so that the heat can penetrate evenly and the fat can melt more easily. This is the key to good cooking.
Season the duck breast and brown it in the pan, skin side down, over very low heat and of course without fat because the duck is already fat enough. Cook for about 6 minutes, regularly emptying the cooking fat into a bowl.
When the duck begins to brown, turn it over and caramelize each side well over a higher heat.
Then bake it (skin side up) in a preheated oven at 180°C for 5 minutes, fan-assisted cooking. This produces a duck breast with crispy skin and perfectly pink and soft flesh. Voila!
