24 Asparagus
4 eggs
2 spring onions
Dill
Parsley
Chervil
Lemon juice and zest

Directions
Peel the asparagus, cook them for 8 minutes in salted water, or steam for 10 minutes. Drain them immediately.
Meanwhile, harden the eggs for 10 minutes in boiling water. Peel them, separate the whites and yolks and set them aside.
Cut the chives into thin strips. In a bowl, prepare the vinaigrette with the olive oil, lemon juice, chopped chives and fleur de sel.
Arrange the asparagus in a serving dish, drizzle with vinaigrette, add the mixture of cut herbs. Sprinkle with mimosa egg whites and yolks, which you will pass through a cheese grater. Grate over the lemon zest and add pepper. Serve immediately.
