Remove the filo pastry from the freezer, keep it in its wrapping, and allow it to defrost by either leaving it in the fridge for one night or at room temperature for at least 2 hours until it’s completely defrosted.
Prepare the filling of your choice, and once it’s ready, unfold the two sheets of filo pastry. Place one of them in a pan that you have previously oiled. Place the filling on the pastry and then cover with the other sheet of filo pastry.
If you want, you can brush the top with egg. Mark the surface to show where you intend to cut the pie and bake in preheated oven at 185ºC (365ºF) for approximately 40 minutes until golden brown.
