Casereccia is a type of pasta made with artisanal methods, according to the customs of the old pasta masters of Fara San Martino. The fine durum wheat semolina and cold spring water are combined to create a firm and homogeneous dough. Then the screw and the nut screw push the dough against the rough bronze die to make the different shapes of pasta.
