500g spaghettini, 500g bacon, 120g parmesan, 6 eggs (yolks), salt, pepper, olive oil.
1. In a large saucepan, bring salted water to a boil
2. Immerse the spaghettini in the water for 6 min
3. Drain and add a drizzle of olive oil. TNG tip: Keep 3 tbsp of cooking water
4. In a frying pan, brown the bacon with fat.
5. In a bowl, whisk the yolks, with 100g of parmesan mixture to the bacon in the pan.
6. Sauté for 2 minutes while mixing
7. Serve and add salt, pepper, and the remaining Parmesan
