The Vegetarian Butcher is all about replicating that moreish taste and texture you get from meat, whilst being better for the planet and animals.
The Vegetarian Butcher was founded in 2010 by Jaap Korteweg, a ninth-generation farmer and meat lover. In 1998, an outbreak of swine fever surged through Europe and Jaap was asked if thousands of carcasses could be kept in his cold stores. Picturing animal carcasses piled high, Jaap declined, and realized the system needed change. He became a vegetarian himself. But Jaap still loved the qualities of meat - the texture and the juiciness. He still wanted to eat it, but he no longer wanted to sacrifice animals for that desire. He therefore became the first butcher who did not want to use an animal: The Vegetarian Butcher.
