Canelés de Bordeaux are a traditional French pastry hailing from the Bordeaux region in southwestern France. These small, cylindrical cakes have a dark, caramelized exterior that gives way to a moist and custardy interior.
To make canelés de Bordeaux, a batter is prepared using a combination of milk, sugar, flour, eggs, and vanilla, which is then flavored with rum and left to rest overnight. The batter is then poured into special copper molds lined with beeswax, which gives the pastry its distinctive shape and flavor.
The canelés are baked at high heat, which caramelizes the exterior of the pastry and creates a crunchy, caramelized crust. The interior of the canelé is soft and custardy, with a subtle vanilla and rum flavor that is both rich and decadent.
Baking instructions:
Preheat your oven to 200°C. Then, heat the canelés for 10 minutes. Leave to cool before serving so the outside can become crisp again.
