Black Garlic, or “Black Gold,” is garlic that has been fermented. During the fermentation process, sugars and amino acids within garlic produce melanoidin – a dark compound responsible for creating the black color and namesake of Black Garlic.
Black Garlic has a rich, creamy texture and can be spread on bread like butter. It is slightly sweet and tangy, with hints of balsamic and a softened core of garlic. We usually describe it as earthy and robust.
