Grass-fed beef osso buco is a delicious and hearty dish that is perfect for a cozy winter dinner. Here's a recipe that you can try:

Ingredients:

  • 4 beef osso buco cuts, about 2 inches thick
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1/2 cup dry white wine
  • 2 cups beef broth
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • Gremolata (optional):
  • 1/4 cup fresh parsley, chopped
  • 1 garlic clove, minced
  • 1 tablespoon lemon zest

Instructions:

 

  1. Preheat the oven to 325°F.
  2. Season the osso buco cuts with salt and pepper, then coat them in flour.
  3. Heat the olive oil in a large Dutch oven over medium-high heat.
  4. Once the oil is hot, add the osso buco cuts to the Dutch oven and cook for 3-4 minutes on each side, until nicely browned.
  5. Remove the osso buco cuts from the Dutch oven and set them aside.
  6. Add the onion, carrots, celery, and garlic to the Dutch oven and cook for 5-7 minutes, until the vegetables are softened.
  7. Add the tomato paste to the Dutch oven and stir to combine.
  8. Pour in the white wine and beef broth, and stir to combine.
  9. Add the bay leaves and thyme to the Dutch oven.
  10. Return the osso buco cuts to the Dutch oven and spoon some of the sauce over the top.
  11. Cover the Dutch oven with a lid and transfer it to the preheated oven.
  12. Braise the osso buco for 2-3 hours, until the meat is very tender and falling apart.
  13. In a small bowl, mix together the parsley, garlic, and lemon zest to make the gremolata (optional).
  14. Remove the Dutch oven from the oven and let it rest for 10-15 minutes before serving.
  15. Serve the osso buco with the sauce and gremolata (if using) on top, and a side of creamy mashed potatoes or risotto.
