2 tsp sugar
40 g raspberry vinegar
50g Basil oil

Directions
Preparation of the raspberry vinaigrette: Gently steam the raspberries in a saucepan with the water and sugar for 5 minutes. Pass everything through a medium-mesh sieve and let cool. Mix the raspberry purée with the vinegar and olive oil. Season with salt and pepper, mix the bottle well, shaking it vigorously.
Preparing the salad: Cut the tomatoes in half. Arrange them in a dish. Add the Mozzarellas cut in 2. Add the raspberries, the cut and pitted plums. Decorate with Basil leaves. Drizzle with vinaigrette and serve immediately.
