HERB ROASTED PORK BELLY
A tender pork belly super crispy crust flavoured with herbs. A super simple recipe and a delight!
2kg pork belly
4 tbsp coarse salt or fleur de sel
Preheat the oven to 180°C. Incise in horizontal lines. This will make cutting easier.
Mix the salt with the herbs put them on the plate. Place the pork belly on top, rind side down, on the salt.
Bake for 1h30-1h40 then turn the meat over, increase the temperature to 200°C and bake for about an hour until the skin becomes golden and crispy. Leave to cool slightly, cut and enjoy.
