A creamy garlic pan seared salmon in a delicious sauce with spinach, small tomatoes and parmesan! A comforting family dish for everyday diner!
SALMON WITH CREAMY SPINACH
This recipe is easy to make, delicious and SO flavourful.
4 salmon steaks
4 tablespoons of olive oil
1 pinch of pepper
250g Small tomatoes
400 g baby spinach
1 pinch of salt
2 cloves garlic
125 ml cream
20g Parmesan powder
1 lemon cut in 4
1 tbsp basil
Wash the spinach leaves and drain them coarsely. Peel and cut the garlic cloves into small cubes. Wash and chop the Basil. Cut the tomatoes in half. Season the salmon with salt and pepper.
Pour 3 tablespoons of olive oil into a saute pan and heat it up. Place the salmon fillets skin side down (the skin touches the bottom) and cook for 6 minutes. Then, turn them gently and cook them for another 2 minutes. Put aside gently to not break the salmon.
Pour 1 tablespoon of olive oil into the pan. Heat through then add the garlic cloves. Let them come back for 2 to 3 minutes then add the cherry tomatoes. Cook for 3 to 4 minutes over medium heat. Add the spinach. Cover and cook for 5 to 7 minutes, until they fall. Add the cream and the Parmesan and cook for 5 minutes over medium heat, until the cream reduces.
Place the salmon on this bed of fragrant spinach and cook for another 3 minutes. Taste, salt and pepper and sprinkle with basil.
Serve with lemon cut in wedges.
